Chickpea Sandwich Spread

15 ounces Canned chickpeas -- drained

1/4 cup red bell pepper -- minced

1 celery stalk -- diced

2 tablespoons fresh parsley -- minced

1 tablespoon scalion or chives -- minced

Juice of 1/2 lemon

1 tablespoon olive oil

1/2 teaspoon dried dill

1/2 teaspoon ground cumin

freshly ground pepper -- to taste

 

Combine all ingredients in a blender or food processor and puree. If you prefer

a chunkier mixture, skip the food processor and mash the chickpeas well and then

combine with remaining ingredients in a mixing bowl.

 

Cover and refrigerate until needed. Serve as a sandwich spread, filling for a

pita bread or as dip with fresh vegetables.
