Guest guest Posted February 10, 2001 Report Share Posted February 10, 2001 * Exported from MasterCook Mac * Chickpea Sandwich Spread Recipe By : Adapted from www.vegkitchen.com Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 15 ounces Canned chickpeas -- drained 1/4 cup red bell pepper -- minced 1 celery stalk -- diced 2 tablespoons fresh parsley -- minced 1 tablespoon scalion or chives -- minced Juice of 1/2 lemon 1 tablespoon olive oil 1/2 teaspoon dried dill 1/2 teaspoon ground cumin freshly ground pepper -- to taste Combine all ingredients in a blender or food processor and puree. If you prefer a chunkier mixture, skip the food processor and mash the chickpeas well and then combine with remaining ingredients in a mixing bowl. Cover and refrigerate until needed.
