Guest guest Posted February 11, 2001 Report Share Posted February 11, 2001 * Exported from MasterCook * Zucchini Stir Fry Recipe By :Ann McCormick Serving Size : 5 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 zucchini -- Italian style 4 ounces mushroom 2 teaspoons parsley 1 small onion -- diced fine 4 garlic cloves -- minced 1/2 teaspoon pepper 3 tablespoons olive oil 1 tablespoon soy sauce 1. Wash zucchini and slice into thin disks. Clean and slice mushrooms. 2. Mix parsley, onion, and pepper. Add zucchini and mushrooms and mix well. 3. In a large skillet, heat the olive oil. Add the minced garlic cloves and cook just until they turn golden brown. This infuses the garlic flavor into the olive oil. 4. Add the zucchini mix and stir fry over medium-high heat until the zucchini is soft and slightly browned. Drain on a paper towel to remove excess fat before serving.
