Orange Vinaigrette

1 teaspoon finely grated or minced orange zest

1/4 cup fresh orange juice

2 teaspoons white wine vinegar or balsamic vinegar

salt & freshly milled pepper

3 tablespoons light olive oil or sunflower seed oil

1 tablespoon extra virgin olive oil

2 drops orange oil or 1 tsp. orange flower water -- (optional)

 

Combine the orange zest and juice, vinegar, and 1/8 teaspoon of salt in a small

bowl and let stand for 15 minutes. Whisk in the oils and season with a little

pepper. Add the orange oil, then taste for salt and adjust the vinegar and oil

if needed.
