Ellen * Exported from MasterCook Mac * Braised Red Cabbage with Apples Recipe By : The Modern Vegetarian Kitchen, Peter Berley p130 Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons unsalted butter -- or olive oil 2 red onions -- about 1/2 pounds - sliced into thin crescents 2 teaspoons brown sugar 1 teaspoon caraway seeds 1 teaspoon coarse sea salt 3/4 cup water 2 1/2 tablespoons cider vinegar 1 head red cabbage -- 1 1/2 to 2 pounds - sliced into 1/2-inch strips 1 large firm apple: Rome - Crispin - Granny Smith -- peeled and sliced - 1/2 inch thick freshly milled black pepper Served hot, this satisfying German-style dish is perfect for a warming autumn or winter meal. At room temperature, it also makes a colorful topping for bruschetta. In a wide heavy saute pan over medium heat, melt the butter. Add the onions, brown sugar, caraway seeds, and salt and saute, stirring occasionally, for 5 to 7 minutes, until softened. Add the water, vinegar, cabbage, and apple.Raise the heat and bring to a boil. Cover, reduce the heat to low, and braise for 25 to 30 minutes. Uncover and cook over high heat for a few minutes until the juices have reduced.
