Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 * Exported from MasterCook II * Garlicky Potato Fans Recipe By : Time-Life's Fresh Ways w/Vegetables Serving Size : 4 Preparation Time :0:10 Categories : Lowfat Microwave Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium russet potatoes (about 2 lbs) -- scrubbed 6 cloves garlic -- finely chopped 1 teaspoon dried oregano 2 tablespoons finely chopped parsley 2 tablespoons extra virgin olive oil 1/4 teaspoon salt freshly ground black pepper Combine the garlic, oregano, parsley, oil, salt and pepper in a small bowl. Slice the potatoes almost all the way through, as you would prepare a loaf of garlic bread, making the cuts about 1/4 " apart. Spread a small amount of the garlic mixture inside each cut. Wrap the potatoes in heavy-duty microwave-safe plastic wrap and microwave them on HIGH , rearranging them every four minutes, until they are tender - 12 to 16 minutes. Let the potatoes stand for 5 minutes before unwrapping them. Arrange them in a serving dish and press down lightly on each one to fan out the slices. - - - - - - - - - - - - - - - - - - NOTES : To prepare these garlicky potatoes in a conventional oven, wrap them in aluminum foil and bake them for about an hour at 400 degrees F.
