Breaded Zucchini Slices w/Cheese

1 pound zucchini, (3 or 4 depending on size), cut

on the diagonal into 1/4 " slices

freshly ground black pepper

1/2 cup freshly grated Romano cheese

1/2 cup fresh bread crumbs

1 tablespoon chopped fresh oregano or 1 tsp dried

3 egg whites, beaten until frothy

2 tablespoons safflower oil

 

Preheat the oven to 325. Grind pepper liberally over the zucchini

slices. In a shallow bowl, combine the cheese, the bread crumbs, and

the oregano. Dip half of the zucchini slices into the beaten egg

whites, then coat them evenly with the cheese-crumb mixture and set

them aside.

 

Heat 1 Tbsp of the safflower oil in a large, ovenproof skillet over

medium-high heat. Use a pastry brush to distribute the oil evenly

over the bottom. Place the breaded slices in the skillet and put the

skillet immediately in the oven. After five minutes, carefully turn

the slices over and bake them until they are golden brown - 5 to 7

minutes more. Remove the slices to a warmed serving platter and

repeat the process with the remaining zucchini and oil. The zucchini

should be eaten hot.
