Acorn Squash Stuffed w/Carrot, Apple & Onion

Amount Measure Ingredient -- Preparation Method

2 acorn squash, halved & seeded

1 zucchini -- grated

1 carrot -- grated

1 small apple, peeled, cored -- finely chopped

1 small onion -- finely chopped

1/4 cup freshly grated Parmesan cheese

1 tablespoon finely chopped fresh tarragon OR

1 tsp dried

1/8 teaspoon salt

freshly ground black pepper

 

In a bowl, combine the zucchini, carrot, apple, onion, cheese,

tarragon, salt and pepper. Pour enough water into a large pot to fill

it about 1 inch deep.. Set a vegetable steamer in the pot and bring

the water to a boil. Stuff the squash halves with the vegetable

mixture and put them in the steamer. Cover the pot tightly, and steam

the squash until tender - about 20 minutes. Transfer the squash to a

platter and serve.

 

Alternatively the squash can be baked. Preheat the oven to 400. Pour

enough water int o a baking dish to fillit about 1 inch deep. Set the

squash halves skin side down in the dish and stuff them with the

vegetable mixture. Cover the dish tightly with aluminum foil and bake

until the squash are tender, about 45 minutes.
