Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 * Exported from MasterCook II * Sweet & Sour Celery Recipe By : Time-Life's Fresh Ways w/Vegetables Serving Size : 4 Preparation Time :0:10 Categories : Lowfat Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch celery, leaves removed, stalks cut on the diagonal into 1 " slices 1 tablespoon sugar 1/4 teaspoon salt 1/8 teaspoon cayenne 1/4 cup cider vinegar 1 tablespoon finely chopped red pepper Pour enough water into a large skillet to fill it about 1/4 " deep. Add the celery, sugar, salt, and cayenne pepper. Cover the skillet, leaving the lid slightly off center to vent steam, and bring the water to a boil. Cook until the celery is tender and the water has evaporated - about five minutes. Remove the pan from the heat and stir in the vinegar. Transfer the sweet and sour celery to a serving dish and scatter the chopped red pepper over the top.
