Sweet Potato Boats

2 medium sweet potatoes (about 1 1/4 lb)

1/2 cup fresh orange juice

1/4 cup lowfat 1% milk

1/4 teaspoon salt

freshly ground black pepper

1 1/2 tablespoons unsalted butter

2 tablespoons chopped parsley

 

Prick the sweet potatoes in several places. Microwave them on HIGH

for 5 minutes, then turn them over and continue cooking them on HIGH

until they feel soft when pierced with a skewer - 3 to 4 minutes

more. Let the sweet potatoes stand for 10 minutes. Roll them gently

on a work surface to soften the flesh under the skin. Halve the sweet

potatoes lengthwise. Carefully scoop the flesh into a bowl, leaving

just enough potato clinging to the skin to form shells (or " boats " )

about 1/8 " thick. Mash the scooped out flesh and mix in the orange

juice, milk, salt and pepper.

 

Put the butter and parsley in a small dish and microwave them on HIGH

for 1 minute, stirring after 30 seconds. Add the butter and parsley

to the sweet potato mixture and beat until smooth. Then transfer the

mixture to a pastry bag fitted with a large star tip, and pipe it

into the sweet potato boats; alternatively, simply spoon the mixture

into the boats.

 

Put the boats on a plate and microwave them on HIGH for 2 minutes;

give the plate a half turn and cook the potatoes for 1 minute more.

Let the boats stand 2 or 3 minutes before serving them.
