Orange-Glazed Radishes

18 ounces radishes (about 4 cups), stem & root ends

trimmed

1 orange

1 tablespoon unsalted butter

1/8 teaspoon salt

freshly ground black pepper

 

Pour enough water into a large saucepan to fill it about 1 inch deep.

Set a vegetable steamer in the pan and bring the water to a boil. Put

the radishes in the steamer and cvoer the pan. Steam the radishes

until they are tender on the outside but still slightly crisp at the

center - 13 to 15 minutes.

 

While the radishes are steaming, use a small, sharp knife to pare

long strips of zest from the orange. Chop the zest very finely and

reserve 1 Tbsp of it. Squeeze the juice from the orange into a small

bowl.

 

Melt the butter in a large, heavy-bottomed skillet over medium heat.

Add the orange juice to the skillet and simmer it with the butter

until the liquid is syrupy - 2 to 3 minutes.

 

Transfer the radishes to the skillet and sprinkle them with the salt

and pepper. Raise the heat to medium high and saute the radishes

until they are evenly coated with a shiny glaze - 2 to 3 minutes.

 

Stir in the reserved zest and cook the mixture for one minute more.

Serve immediately.
