Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 * Exported from MasterCook * Chocolate-Peanut Butter Fudge Recipe By : Vegetarian Celebrations, by Nava Atlas, page 32 Serving Size : 60 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup semisweet chocolate chips -- (6 ounces) OR 6 ounces semisweet baking chocolate 1/4 cup light brown sugar 2 tablespoons low-fat milk 1/2 cup oatmeal or quick-cooking oats 1/3 cup reduced-fat peanut butter -- at room temperature Makes 5 to 6 dozen 1-inch pieces Pack squares of this fudge in an attractive container to give as a rich, gooey gift to someone you love. Combine the chocolate, sugar, and milk in the top of a double boiler or in a small aluminum bowl perched atop a saucepan filled with a small amount of water. Cook over low heat until smoothly melted. Stir in the oatmeal. Drop the peanut butter in by rounded teaspoonfuls. Swirl it in until evenly distributed throughout but not blended in. Line a small shallow baking dish with wax paper. Pat the chocolate mixture in with the help of a cake spatula. Refrigerate for several hours until chilled and firmly set. Cut into 1-inch squares.
