Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 egg whites -- at room temperature

1 cup light brown sugar

2 tablespoons canola oil

1 teaspoon vanilla extract

1 cup whole wheat pastry flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1 dash nutmeg

Makes about 2 dozen

These little cookies can be enjoyed with a minimum of guilt. They have a

moist, almost brownie-like texture, yet they are completely

cholesterol-free and quite low in fat. They'll be appreciated by those who

really can't splurge too much.

Preheat the oven to 325 degrees.

Beat the egg whites with an electric mixer until stiff. Gradually beat in

the sugar, oil, and vanilla.

In a small mixing bowl, combine the remaining ingredients. Work into the

whipped egg white mixture to form a stiff dough.

Drop by rounded teaspoonfuls onto a nonstick baking sheet. Bake for 10

minutes, or until the tops of the cookies feel set.

Cool on a rack, then store in an airtight container.

" Chocolate is not only pleasant to taste, but it is a veritable balm at the

mouth, for the maintaining of all glands and humours in a good state of

health. " -Dr Blancardi, 1705
