Chocolate Chip Oat Cookies

1/2 cup reduced-fat margarine -- (1 slick) softened

2/3 cup packed brown sugar

1 egg -- beaten

1 teaspoon vanilla extract

1 1/2 cups whale wheat pastry flour

1 cup rolled oats

1 teaspoon baking powder

1/4 teaspoon salt

1 cup semisweet chocolate chips

1/4 cup toasted sunflower seeds

 

Makes about 30

 

Chewy and chunky with oats, sunflower seeds, and chocolate, these cookies

make a great gift to pack in a box for your sweetie.

 

Preheat the oven to 375 degrees.

 

In a mixing bowl, cream together the margarine and sugar. Beat in the egg

and vanilla until fluffy and smooth. In another bowl, combine the flour,

oats, baking powder and salt. Work in the margarine mixture, using

hands. Work in the chocolate chips and sunflower seeds. Drop onto 1 or 2

baking sheets in rounded, slightly flattened tablespoonfuls.

 

Bake 10 to 12 minutes, or until the bottoms of the cookies are lightly

golden. Remove from the sheets gently with a spatula and cool on plates.

7 g, Protein: 2 g, Sodium: 48 mg.
