I keep forgetting to make things clear about the Bumblebars - both the original

and the Chocolate Crisp have peanuts (the box I'd ordered a while ago didn't

seem to have many, but now it's clear that the Chocolate Crisp DOES have

peanuts!) But I'm partial to the Lushus Lemon - no peanuts, but soy protein!

Ginger-Baked Tofu

1 pound firm tofu

2 tablespoons fresh lemon juice

2 tablespoons mirin (sweet Japanese sake)

2 tablespoons shoyu

2 tablespoons canola oil

1 teaspoon toasted sesame oil

1 tablespoon pure maple syrup

1 tablespoon minced peeled ginger

2 garlic cloves -- minced

1 teaspoon dried thyme

pinch cayenne

 

Place the tofu on a pie plate and top with a second plate. Weight the plate

with a heavy can or two and press for at least 30 minutes. Drain.

 

Make the marinade by whisking together in a bowl the lemon juice, mirin, shoyu,

canola oil, sesame oil, and maple syrup. Mix in the ginger, garlic, thyme,

garlic, and cayenne.

 

Place the tofu cake on its side and cut it into 3 thin slices. Place the cake

flat again and cut diagonally through all 3 layers to make 6 triangles. Cut the

triangles down the middle into smaller triangles. Arrange the triangles in an 8

x 8-inch baking dish in a single layer fitting the pieces together like a

mosaic. Pour the marinade over the tofu. Let it sit for at least 30 minutes

and up to overnight, turning once.

 

Preheat the oven to 375F.

 

Bake the tofu in its marinade for about 40 minutes, or until the tofu is golden

brown and the marinade is absorbed.
