Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 * Exported from MasterCook * Corn Doggies Recipe By :Bill Hafnagle Serving Size : 7 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Corn oil for greasing 1/2 cup all-purpose flour 1/2 cup stone-ground cornmeal 2 tablespoons firmly packed light brown sugar 1 teaspoon ground cayenne pepper 1/2 teaspoon salt 2 tablespoons baking powder 2/3 cup buttermilk 2 jumbo eggs 1/4 cup golden molasses 2 tablespoons butter -- melted Preheat the oven to 425°F. Grease a cast-iron corn-ear pan or frying pan with corn oil and heat in the oven. If you are preparing the doggies by hand, in a large mixing bowl, combine the flour, cornmeal, brown sugar, cayenne pepper, salt, and baking powder. Whisk together for 30 seconds to thoroughly mix the dry ingredients. In a small bowl, combine the buttermilk, egg, molasses, and melted butter and stir until well blended. Form a well in the center of the flour mixture and pour in the liquid mixture. Stir until a smooth batter forms. If you are preparing the doggies using a food processor, combine the flour, cornmeal, brown sugar, cayenne pepper, salt, and baking powder in the workbowl of the processor equipped with a chopping blade. Pulse 2 or 3 times to mix completely. While the blades are spinning, pour in the buttermilk, eggs, molasses, and melted butter and process until a smooth batter forms, approximately 1 minute. Carefully remove the cast-iron pan from the oven and pour off the excess oil. Pour the batter into the cast-iron pan. Bake until a toothpick inserted into a doggie comes out clean, about 15 minutes. Allow to cook in the pan for 5 minutes before removing. Makes about 7 corn doggies.
