Serving Size : 6 Preparation Time :0:15 Categories : Asian Lowfat Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans -- trimmed 1/2 lime or lemon 1 tablespoon safflower oil 1 teaspoon cornstarch mixed with 1 Tbsp low-sodium soy sauce and 1/4 cup water 2 tablespoons fermented black beans -- rinsed freshly ground black pepper Bring two quarts of water to a boil in a saucepan. Squeeze the lime or lemon juice into the water, then drop in the rind. Plung the green beans into the water and cook them for four minutes after the water comes back to a boil - they should still be crisp. Drain the beans and refresh them under cold running water until they are cool. Discard the lime or lemon rind. Heat the oil in a wok or heavy-bottomed skillet over high heat. Saute the green beans, stirring constantly, until they are tender - about 3 minutes. Turn down the heat to medium and cook one minute more. Stir the cornstarch mixture and the black beans together. Pour this mixture onto the green beans, sprinkle with the pepper and stir well. Continue cooking for one minute more and transfer to a serving dish.
