Vegetable Soup With Coconut

Amount Measure Ingredient -- Preparation Method

175 Grams Turnip

175 Grams Sweet Potato

175 Grams Pumpkin

25 Grams Butter Or Margarine

1/2 Red Onion -- Finely Chopped

1 Teaspoon Marjoram

1/2 Teaspoon Ground Ginger

1/4 Teaspoon Ground Cinnamon

1 Tablespoon Spring Onions -- Chopped

1 Liter Vegetable Broth

2 Tablespoons Almond Slivers

1 Chili -- Seeded And Chopped

1 Teaspoon Sugar

25 Grams Creamed Coconut

Salt And Pepper -- To Taste

Chopped Cilantro -- Optional

 

1. Peel the turnip, sweet potato and pumpkin. Chop into medium-size dice.

 

2. Melt the butter or margarine in a large non-stick saucepan. Fry the onion

for 4-5 minutes. Add the diced vegetables and fry for 3-4 minutes.

 

3. Add the marjoram, ginger, cinnamon, spring onion, salt and pepper to the

pan. Fry over a low heat for about 10 minutes, stirring frequently.

 

4. Add the vegetable stock, almond slivers, chopped chili and sugar and stir

well to mix, then cover and simmer gently for about 10-15 minutes, or until

all the vegetables are just tender.

 

5. Grate the creamed coconut into the soup and stir to mix. Sprinkle with

chopped coriander, if liked, then spoon into warmed bowls and serve.

NOTES : The mild, creamy flavour of coconut makes this a vegetable soup for

everyone to enjoy all year round.
