Plantain And Green Banana Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 Plantain -- Firm, Yellow

3 Green Bananas

1 Garlic Clove -- Crushed

1 Red Onion

1 Tablespoon Chopped Cilantro -- Up To 2 Tablespoons

3 Tablespoons Sunflower Oil

1 1/2 Tablespoons Malt Vinegar

Salt And Pepper -- To Taste

 

1. Slit the plantains and bananas lengthwise along their natural ridges,

then cut in half and place in a large saucepan.

 

2. Cover the plantains and bananas with water, add a little salt and bring

to the boil. Boil gently for 20 minutes until tender, then remove from the

water. When they are cool enough to handle, peel and cut into medium-size

slices.

 

3. Put the plantain and banana slices into a bowl and add the garlic,

turning to mix.

 

4. Halve the onion and slice thinly. Add to the bowl with the coriander,

oil, vinegar and seasoning. Toss together to mix and then serve.

NOTES : The plantains and bananas may be cooked in their skins to retain

their soft texture. They will then absorb all the flavor of the dressing.
