Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook * Mandazi Recipe By : Classic African by Rosamund Grant Serving Size : 15 Preparation Time :0:00 Categories : African Cakes Dairy Restricted East African Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 Cardamom -- Pods 450 Grams Self-Rising Flour 3 Tablespoons Sugar, Powdered 1 Teaspoon Baking Soda 1 Egg -- Beaten 2 Tablespoons Vegetable Oil Vegetable Oil -- For Deep-Frying 225 Milliliters Milk -- -Or- Water 1. Crush each cardamom pod, shake out the seeds and grind them in a small pestle and mortar. Place in a large bowl with the flour, sugar and baking powder. Stir well. 2. Put the egg and oil in a small bowl and beat together, then add to the flour mixture. Mix with your fingers, gradually adding the milk or water to make a dough. 3. Lightly knead the dough until smooth and not sticky when a finger is pushed into it, adding more flour if necessary. leave in a warm place for 15 minutes. 4. Roll out the dough to about a 1 cm | 1/2 " thickness and cut into 6 cm | 2-1/2 " rounds. heat the oil and deep fry the mandazis for 4-5 minutes, until golden brown, turning frequently in the oil. - - - - - - - - - - - - - - - - - - NOTES : Serve these East African breads either as a snack or as an accompaniment to a meal.
