Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook * Bean And Gari Loaf Recipe By : Classic African by Rosamund Grant Serving Size : 4 Preparation Time :0:00 Categories : African Beans And Pulses Dairy Restricted Ghana Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 225 Grams red kidney beans -- soaked overnight 1 Tablespoon butter -- -or- margarine 1 onion -- finely chopped 2 garlic cloves -- crushed 1/2 red pepper -- seeded and chopped 1/2 green pepper -- seeded and chopped 1 green chile -- seeded and chopped 1 Teaspoon mixed chopped herbs 2 eggs 1 Tablespoon lemon juice 75 Milliliters gari salt and pepper -- to taste 1. Drain the beans, place in a pan, cover with water and boil for 15 minutes. Reduce the heat and boil for 1 hour, or until the beans are tender. Drain, reserving the cooking liquid. Grease a 900 gr. | 2 lb. loaf tin and preheat the oven to 190C | 375F. 2. Melt the butter or margarine and fry the onion, garlic and peppers for 5 minutes. Add the chile, herbs, and seasoning. 3. Place the cooked kidney beans in a bowl and mash to a pulp. Add the onion and pepper mixture and stir well. Cool slightly, then stir in the eggs and lemon juice. 4. Place the gari in a separate bowl and sprinkle generously with warm water. The gari should become soft and fluffy after about 5 minutes. 5. Pour the gari into the bean and onion mixture and stir together thoroughly. If the consistency is too stiff, add a little of the bean liquid. Spoon the mixture into the prepared loaf tin and bake in the oven for 35-45 minutes, until firm to the touch. 6. Cool the loaf in the tin before turning it out on to a plate. Cut into thick slices and serve. COOK'S TIP Gari is a course-grained flour used as a staple food in a similar way to ground rice. Gari is made from a starchy root vegetable, cassava, which is first dried then ground. - - - - - - - - - - - - - - - - - - NOTES : This recipe is a newly created vegetarian dish using typical Ghanaian flavors and ingredients.
