Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook * Plum Tomatoes With Olive Oil And Herbs Recipe By : Vegetarian Celebrations, by Nava Atlas, page 26 Serving Size : 2 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ripe plum tomatoes -- up to 3 1 tablespoon minced fresh herbs -- up to 2 1 teaspoon olive oil freshly ground pepper -- to taste 2 servings Winter tomatoes leave much to be desired, but I've found that plum tomatoes are acceptable, even out of season. I put them in a paper bag in a dark place for 2 days or so to improve their color and flavor. Slice the tomatoes crosswise and arrange on 2 small individual plates. Sprinkle with the herbs and drizzle with a few drops of olive oil. Add a grinding of pepper and serve.
