Plum Tomatoes With Olive Oil And Herbs

2 ripe plum tomatoes -- up to 3

1 tablespoon minced fresh herbs -- up to 2

1 teaspoon olive oil

freshly ground pepper -- to taste

Winter tomatoes leave much to be desired, but I've found that plum tomatoes

are acceptable, even out of season. I put them in a paper bag in a dark

place for 2 days or so to improve their color and flavor.

 

Slice the tomatoes crosswise and arrange on 2 small individual

plates. Sprinkle with the herbs and drizzle with a few drops of olive

oil. Add a grinding of pepper and serve.
