Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook Mac * Tempeh Simmered in Broth Recipe By : The Modern Vegetarian Kitchen, Peter Berley p281 Serving Size : 4 Preparation Time :0:00 Categories : Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tempeh -- sliced into - bite-sized pieces 4 cups water 3 tablespoons naturally brewed soy sauce 1 tablespoon extra virgin olive oil 3 cloves garlic -- to 4 cloves - lightly bruised with the side of a knife 2 slices gingerroot -- to 3 - quarter-sized 1 sprig fresh rosemary 1 sprig fresh thyme thinly sliced scallion -- green and white part - for garnish Yield 4 to 6 servings. This simple preparation is one of my favorite ways to enjoy tempeh. It is an excellent way to begin including this " other white meat " into your daily diet. Feel free to vary the herbs and add a few of your favorite chopped seasonal vegetables and some leftover grains or pasta to the broth. It will make a terrific one-pot meal! In a saucepan over high heat, combine the tempeh, water, soy sauce, oil, garlic, ginger, rosemary,a nd thyme. Bring to a boil. Reduce the heat to low and simmer, covered, for 30 minutes.
