Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 * Exported from MasterCook Mac * Sweet Ginger Tofu Recipe By : The Modern Vegetarian Kitchen, Peter Berley p263 Serving Size : 4 Preparation Time :0:00 Categories : Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup naturally brewed soy sauce 1/4 cup mirin 1/4 cup rice vinegar 2 tablespoons light honey 2 tablespoons minced gingerroot 2 tablespoons light sesame oil 1 teaspoon minced garlic 1 pound firm tofu -- rinsed & patted dry - sliced 1/2 inch thick Served 4 to 6. This Asian-style dish is great served with soba noodles. Or after it is cooked, cut it up and simmer it in simple dashi broth or miso soup. You can also julienne the cooked tofu and use it as a protein-rich filling for the Nori Maki. Preheat the oven to 350F. In a bowl, combine the soy sauce, mirin, vinegar, honey, ginger, oil, and garlic. Lay the tofu slices in a baking dish that can hold them in a single snug layer. Pour the marinade over the tofu. Bake for 45 minutes, or until the tofu is nearly dry and well browned.
