Rajma-Chana Salat (Indian Chick-Pea and Bean Salad)

Amount Measure Ingredient -- Preparation Method

1 cup canned or cooked chick-peas -- drained, well rinsed

or small white beans

1 cup peas -- fresh or frozen

1 cup yellow wax beans -- fresh or frozen

4 green onions and tops -- cut into 2 " long slivers

1 medium red onion (sliced into rings -- rings halved)

1/2 cup minced fresh parsley

1 tablespoon minced fresh coriander

2 small fresh hot chiles (seeded -- cut into thin rings)

1 small lemon -- cut into rings

salt and coarsely ground black pepper -- to taste

Rajma-Chana Dressing -- see separate recipe

 

In a large bowl toss together all ingredients except salt, pepper, and dressing.

Chill while you make Rajma-Chana Dressing. Season salad with salt and pepper to

taste and pour over dressing. Toss lightly and serve chilled.

Rajma-Chana Dressing

1/4 cup light-flavored vegetable oil

1 tablespoon olive oil

2 tablespoons cider vinegar

1/2 teaspoon sugar

6 cloves garlic -- finely minced

1/2 teaspoon minced fresh ginger

1/4 teaspoon crushed dried hot chiles

1/4 teaspoon ground cumin

1/8 teaspoon ground fenugreek

1/8 teaspoon anise seed

1/4 teaspoon dry mustard

 

In a jar with a tight-fitting lid, shake all ingredients vigorously. Set aside

for at least 2 hours, shaking occasionally.
