Tofu and Broccoli Stir-Fry

1 pound firm tofu -- frozen, thawed and well pressed

1/4 cup plus 2 tablespoons shoyu or soy sauce

2 teaspoons dark sesame oil

1/4 cup fresh lemon juice

1 1/2 teaspoons cornstarch

1 tablespoon cold vegetable stock or water

1 tablespoon peanut oil

1 large onion -- sliced thin

8 cloves garlic -- minced

4 teaspoons grated peeled gingerroot

6 to 8 cups broccoli -- cut into small florets and stems

3/4 to 1 cup vegetable stock

2 to 4 teaspoons lightly toasted sesame seeds

 

Cut the tofu into 1/2 inch dice. In a bowl, whisk 1/4 cup of the shoyu with the

dark sesame oil and lemon juice. Add the tofu and marinate for 10 minutes or

so, occassionally stirring gently.

 

Combine the cornstarch and cold stock or water; set aside for 2-3 minutes, until

the cornstarch is dissolved thoroughly. Whisk in the remaining shoyu.

 

Set a wok over high heat. Pour the peanut oil around the rim, then tilt the pan

to coat the sides. Add the onion and stir-fry for 2-3 minutes, until

translucent. Stir in the garlic and ginger. Continue to stir-fry, gradually

adding the broccoli.

 

Add the tofu, marinade, and 3/4 cup of the stock. Cover the wok and steam

briefly, until the broccoli is crisp-tender and still bright green. If

necessary, add 2-4 tablespoons more stock and steam for 1-2 minutes longer.

 

Add the dissolved cornstarch and shoyu mixture and stir constantly until the

liquid thickens. Serve immediately, garnished with sesame seeds.
