Baked Tomatoes

2 good-sized plum tomatoes

fine bread crumbs

grated fresh Parmesan cheese

dried thyme

Winter tomatoes leave much to be desired, but I've found that plum tomatoes

are acceptable, even out of season. I put them in a paper bag in a dark

place for 2 days or so to improve their color and flavor.

 

Cut each tomato in half and arrange cut side up on a baking dish. Sprinkle

each half lightly with bread crumbs, Parmesan cheese, and thyme. Bake for

15 to 20 minutes.
