Guest guest Posted February 5, 2001 Report Share Posted February 5, 2001 * Exported from MasterCook II * Honey-Lemon Brown Rice w/Spinach Recipe By : 500 Practically Fatfree Pasta Recipes Serving Size : 6 Preparation Time :0:10 Categories : Lowfat Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups broth 3/4 cup uncooked brown rice 3 scallion -- chopped 2 cloves garlic -- minced 2 tablespoons chopped fresh parsley 1 teaspoon dried dill weed 10 ounces frozen chopped spinach -- thawed and drained 1 1/2 tablespoons lemon juice 1 tablespoon honey 1 lemon, cut into wedges Heat 1 Tbsp broth in saucepan. Add rice, scallions, and garlic. Saute until liquid has been absorbed, about 2 minutes. Add remaining broth and bring to a boil. Stir in parsley and dill. Reduce heat, cover, and simmer until rice is tender, about 25 minutes. Stir spinach into rice and simmer for 5 minutes. Mix together the lemon juice and honey until well blended.
