Leek-Thyme Rice

Amount Measure Ingredient -- Preparation Method

2 1/4 cups broth

1 cup finely chopped leek

1 1/2 cups uncooked white rice

1 cup water

1/2 teaspoon dried thyme

1/8 teaspoon ground black pepper

1/4 cup chopped red onion

1/4 cup chopped red bell pepper

 

Heat 1/4 cup broth in saucepan. Stir in leek and saute for 2 minutes.

 

Add rice, remaining broth, water, thyme, and black pepper. Bring to a

boil. Reduce heat, cover, and simmer until liquid is absorbed, about

20 minutes.

 

Toss with onion and bell pepper and serve.
