Guest guest Posted February 5, 2001 Report Share Posted February 5, 2001 * Exported from MasterCook * Potato Pancakes With Warm Applesauce Recipe By : Everyday cooking with Dr. Dean Ornish, page 250 Serving Size : 6 Preparation Time :0:00 Categories : Breads, Quick Fruits Potatoes Ornish: Everyday Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 russet-type baking potatoes 3/4 cup egg whites (from approximately 6 large eggs) OR liquid egg substitute 1/4 cup grated onion 2 tablespoons chopped parsley 1 pinch ground nutmeg Salt and pepper 1 cup applesauce (see separate recipe or store-bought) 1 teaspoon minced fresh thyme OR ground cinnamon -- to taste Crisp and golden-brown, these savory pancakes are a Chanuka tradition. But they are worth making throughout the year-to serve with soup, with a vegetable stew, or for Sunday brunch. Parboiling (blanching) the potatoes first keeps them from turning brown and helps the pancakes cook faster. MAKES 16 PANCAKES TO SERVE 6. Bring a large pot of salted water to a boil over high heat. Peel potatoes, then blanch them whole in the boiling water for 2 minutes. Set aside to air-dry for 10 minutes, then grate by hand or in a food processor using the coarse grating attachment. In a bowl, combine grated potatoes, egg whites, onion, parsley, and nutmeg. Season to taste with salt and pepper. Spray a large, non-stick skillet with cooking spray. Set over moderate heat. When skillet is hot, make pancakes, using 1/3 cup batter for each pancake. Cook until golden-brown and done throughout, about 4 minutes per side. Transfer to a warm platter. Combine applesauce and thyme. Heat gently in a small saucepan or in a microwave until hot. Serve with potato pancakes. Cooking sprays are not innocent when it comes to fat. They are primarily of vegetable oils, and if you not careful when spraying, you can add a significant amount of added fat to your meals. Choose a non-stick spray made of canola oil and spray lightly. A one-third-of-a-second spray delivers more than 1/4 gram of fat. So if you've been heavy on the trigger, lighten up. Serving Size: 4 pancakes.
