Guest guest Posted February 5, 2001 Report Share Posted February 5, 2001 Stevia Coconut Ice Cream - Vegan 14 ounces coconut milk 1 cup water 1 teaspoon vanilla extract 1 teaspoon coconut Ice Cream 1/2 teaspoon pure stevioside (white stevia powder - go to www.CookingWithStevia.com for more information about stevia) 1/4 cup toasted chopped almonds (optional) 1. In a blender, combine coconut milk, water, vanilla and stevioside. 2. Pour milk mixture and nuts into an ice cream maker. Freeze according to manufacturer directions. 3. When frozen to desired consistency, serve immediately. Garnish with chopped nuts if desired.
