Guest guest Posted February 4, 2001 Report Share Posted February 4, 2001 * Exported from MasterCook * Melon and Watercress Salad Recipe By :BH & G Lightstyle, Spring 2001, page 69 Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups watercress -- (stems and leaves) 12 arugula leaves -- (12 to 16) 1 1/2 cups assorted melon balls (such as watermelon, cantaloupe, and/or honeydew) 1 medium orange -- peeled and sectioned 1/4 medium red onion -- cut into thin slices 2 tablespoons pecan halves -- lightly toasted OR walnut halves 2 tablespoons fresh mint leaves -- thinly sliced Citrus Vinaigrette: 2 tablespoons lemon juice 1 tablespoon orange juice, frozen concentrate -- thawed 1 1/2 teaspoons orange peel -- finely shredded 1/2 teaspoon Dijon-style mustard 1/4 teaspoon sugar 3 tablespoons olive oil salt and pepper -- to taste Arrange watercress and arugula leaves on two salad plates. Divide melon, orange, onion, nuts, and mint between plates. Drizzle Citrus Vinaigrette over salads as desired. Cover and refrigerate remaining vinaigrette. Makes 2 Servings. Citrus Vinaigrette: Combine lemon juice; frozen orange juice concentrate, thawed; orange peel; Dijon-style mustard; and sugar in a bowl. Slowly beat in olive oil until thick. Add salt and pepper to taste. Makes 1/3 cup.
