Kathleen * Exported from MasterCook * Orange Marmalade Crescents Recipe By : 1,001 Low-Fat Vegetarian Recipes by Sue Spitler, page 662 Serving Size : 24 Preparation Time :0:00 Categories : Buns And Rolls Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Potato Bread (see separate recipe) 1/4 cup sugar 2 tablespoons margarine -- softened 3/4 cup orange marmalade 1/2 cup raisins 1/4 cup sliced almonds -- divided, up to 1/2 1/4 cup light rum OR 1-2 teaspoons rum extract 1/4 cup honey 2 tablespoons orange juice Fragrant coffeecakes for special occasions are drizzled with a warm honey and orange topping. 2 loaves (12 servings each) 1. Make recipe for Potato Bread through step 2, adding 1/4 cup sugar to the 2 tablespoons sugar in the recipe. 2. Divide dough into two equal pieces; roll each piece on floured surface into 15 x 6 inch rectangles. Spread each rectangle with 1 tablespoon margarine and place on greased cookie sheets. Make 2-inch cuts at 1-inch intervals along the long sides of dough rectangles. 3. Mix orange marmalade, raisins, half the almonds, and rum; spread half the mixture down center of each rectangle. Crisscross the cut strips over filling; pinch ends of coffeecakes to seal. Curve each coffeecake into crescent shape. Let rise, covered, until impression of finger remains in dough when touched, 1 to 1 1/2 hours. 4. Bake at 375 degrees until coffeecakes are golden, about 20 minutes. Transfer coffeecakes to wire racks. 5. Heat honey and orange juice in small saucepan until hot brush over coffeecakes and sprinkle with remaining almonds. Serve warm.
