Guest guest Posted February 4, 2001 Report Share Posted February 4, 2001 * Exported from MasterCook * Crustless Carrot Quiches Recipe By :Farm Fresh to You Serving Size : 0 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup sliced green onions 1 clove garlic -- minced 1 tablespoon margarine 1 1/2 cups shredded carrot 3 slightly beaten eggs 1 1/2 cups shredded reduced-fat Monterey Jack cheese 3 tablespoons yellow cornmeal 1/4 teaspoon ground nutmeg 1/2 teaspoon dried basil -- crushed Preheat oven to 325 degrees. Cook green onions and garlic in margarine in a skillet until the onion is tender, but not brown. Add carrot; cook about 2 mins more or till crisp tender. Remove from heat. Stir together eggs, cheese, cornmeal, basil and nutmeg in a bowl. Stir in carrot mixture. Coat a muffin tin or 9-inch pie pan with nonstick cooking spray. Spoon about 1 Tbs. carrot mixture into each muffin cup or pour batter into pie pan. Bake muffins for 18 mins or until set, and pie for 25 mins or until set. Let stand 2 minutes. Remove from pans. Serve hot.
