Reduced calorie margarine -- divided 1 cup Leeks -- thinly sliced 2 tbsp. Flour 1 pkg. Frozen petite peas (10 oz.) 4 cups Vegetable broth 1 lb. Fresh sugar snap peas or snow peas -- strings removed 2 cups Butter lettuce -- chopped 1 1/2 cups Water 1/2 cup Light cream 1/2 cup Plain low-fat yogurt GARNISH: Plain low-fat yogurt Butter lettuce Green onions In a heavy saucepan, melt 2 tbsp. margarine; add the leeks and saute until tender (about 10 minutes). Add flour, mixing well. Stir in the frozen peas and broth. Cook for 20 minutes over low heat. Transfer the cooked mixture to food processor or electric blender. Puree. Set aside. Cook the snap or snow peas and lettuce with the remaining 1 tbsp. margarine in the water for about 15 minutes. Puree this mixture in food processor or electric blender. Strain to remove any fibers. Combine pureed mixtures and thin with the cream and yogurt. Add salt and pepper, if desired, to taste. Garnish with a dollop of yogurt, sliced butter lettuce, and green onions. - - - - - - - - - - - - - - - - - - NOTES : Author: Karen Mangum Note: This recipe uses a fresh sugar snap pea, which is a cross between the rounder shell pea and the flat snow pea. Buy the smallest pods for the sweetest flavor. Freshness is the key when buying any pea because, like corn, the sugar gradually turns to starch once it is picked. The pest way to check for freshness is to snap open a pod and eat a pea. It should taste sweet.
