(And it's vegetarian and vegan....so ALL folks could enjoy it. And, I think it is low-fat.) Main thing is: it's neutral in taste...not too spicy (for company). BUT, you can add stuff to suite yourself, as you can see I did. We like more spice -- which can get me into trouble when serving company. LOL SO, this recipe works for me! I can modify it when we are eating alone...(we like red pepper flakes, lots of garlic, cilantro, etc.) and leave it as it is when having people over. (According to Burt Wolf's book, this rice is served at La Mansion Del Rio, San Antonio, Texas.) Brenda Adams * Exported from MasterCook * Pineapple Rice - safe for company Recipe By :Good To Eat, by Burt Wolf (printed in) Serving Size : 4 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 1 cup long-grain rice 1 slice fresh pineapple -- (4-ounces) 2 tablespoons olive oil 1/4 cup scallion -- finely chopped -- white and green parts 1 clove garlic 1/2 cup finely diced roasted red bell pepper -- see ** 1/4 cup pineapple juice salt and pepper -- to taste [i added a handful of chopped cilantro for flavor and color] [Next time, add chile flakes for same] [Feta cheese is good on top] ** You can buy jars of roasted red bell peppers. [i didn't have any...so I used 4 ounce jar of pimientos.] TO COOK THE RICE: In a saucepan, bring the water to a boil, add the rice, cover, and simmer for 17 minutes, or until the rice is done. Set aside. TO PREPARE THE PINEAPPLE: While the rice is cooking, preheat a non-stick skillet until it is very hot. Add the pineapple slice and cook over high heat for about 2 minutes per side, or until the pineapple is brown. Remove from the skillet and cut the pineapple into a fine dice; reserve for later. TO ASSEMBLE THE RICE: In a saute pan, heat the oil for 30 seconds. Add the scallions and garlic and saute for a minute, or until the scallions are tender. Add the pineapple, roasted red bell pepper, and pineapple juice and boil down until the liquid has almost entirely evaporated. Season with salt and pepper and stir this mixture into the cooked rice. I used 4 ounces pimientos instead of roasted bell peppers, I added a handful of chopped cilantro and added at the end of cooking. I wish I had added a teaspoon of red chile flakes when adding garlic and onion to heated olive oil. Good dish to serve company....isn't spicy...and is vegetarian/vegan. I prefer a bit more jazz -- more flavor. However, for company this would be colorful and safe.
