I would add onion and garlic per my usual. Sheryl * Exported from MasterCook * Black Bean and Corn Burritos Recipe By :Good Housekeeping, February 2001 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons chili powder 1 can black beans -- rinsed, drained & coarsely mashed 1 15 1/4-ounce can corn kernels -- drained 3 tablespoons sliced pickled jalapenos -- drained and chopped 4 large flour tortillas -- warmed 2 cups chopped lettuce 2 medium tomatoes -- chopped 1 cup shredded mexican blend cheese sour cream -- optional In a 3 qt saucepan, toast chili powder over medium heat for 1 minute or until fragrant. Stir in black beans, corn and jalapenos; cook 3-4 minutes or until the mixture is hot, stirring occasionally. Plafe 1/4 of the bean mixture in the center of each tortilla; top each with 1/4 of the lettuce, tomatoes and cheese. Fold two opposite sides of each tortilla over the filling, then fold over the other sides to form a package. Serve with sour cream if desired.
