Guest guest Posted February 3, 2001 Report Share Posted February 3, 2001 Stevia Pumpkin Bars - Vegan- 2 cups whole-wheat flour 1-tablespoon baking powder 1-teaspoon baking soda 1 egg equlivent EnerG egg replacer (available at health food stores) 1/2 teaspoon salt 1-tablespoon ground cinnamon 2 teaspoons pumpkin pie spice 1-teaspoon pure stevioside powder ( " white stevia " a natural sweetener available at health food stores. For more information visit www.CookingWithStevia.com .) 1/4 cups soymilk 1/3 cup pitted dates, chopped 1 cup cooked, mashed pumpkin 8 ounces tofu 1-cup currents 1. Preheat oven to 350 F. Lightly oil a 9 " X 13 " pan. 2. Combine flour, baking powder, soda, EnerG, salt, spices and stevia in a large bowl. 3. In a food processor or blender, combine soymilk, dates, pumpkin and tofu. Blend until smooth 4. Add wet ingredients to the flour mixture. Add currents. Combine until moist. 5. Pour into baking pan. Bake at 350 F for 30 -40 minutes or until toothpick comes out clean. 6.
