Soba Noodles with Wilted Kale

1 pound kale (1 bunch) -- chopped

1 cup cooked soba noodles

1/4 cup chopped scallion

4 tablespoons raw sesame seeds

1 tablespoon flaxseed oil

1/4 cup tamari or light soy sauce

 

In a large pot of boiling water, immerse kale until it turns bright green, about

30 seconds. Drain and place in a large bowl.

 

Add the remaining ingredients to the bowl, toss, and serve.
