Fruit and pasta! This is a fruity tomato sauce!

Pasta with Dried Fruit

 

Recipe By :Maureen Keane and Daniella Chace 1997

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 tablespoons extra-virgin olive oil

4 cloves garlic -- minced

1/4 cup finely chopped dried papaya

1/4 cup finely chopped dried cherries

1/4 cup finely chopped dried apricots

2 1/2 tablespoons balsamic vinegar

2 Roma tomatoes -- diced

12 ounces pasta of choice

 

Heat olive oil in a large pan. Add garlic and saute over medium-low heat until

lightly browned.

 

Add the fruit, vinegar, and tomatoes. Cook on low heat for 20 minutes. Cover and

keep warm.

 

Cook pasta as directed on the package. Drain thoroughly and toss with

dried-fruit sauce.
