Here's a peek at the anti cancer and healing diet. This recipe comes from " What

to Eat If You Have Cancer Cookbook "

 

Caution: This is not " lowfat " in the " under 30% of the calories from fat "

meaning of the word.

 

372 Calories; 16g Fat (36.2% calories from fat); 17g Protein; 46g Carbohydrate;

8g Dietary Fiber; 0mg Cholesterol; 456mg Sodium. Exchanges: 2 Grain(Starch); 1

1/2 Lean Meat; 2 1/2 Vegetable; 2 1/2 Fat.

 

If we finish the pasta with flaxseed oil, each serving goes up to 452 Calories;

25g Fat (47.2% calories from fat)

Mushroom Tofu Supreme

 

Recipe By :Maureen Keane and Daniella Chace 1997

Amount Measure Ingredient -- Preparation Method

4 tablespoons sesame seeds

2 tablespoons extra-virgin olive oil

2/3 pound yellow onions (2 large) -- sliced thin

8 cloves garlic -- chopped fine

8 ounces firm tofu (not silken) -- cut into small cubes

1 pound mushrooms -- sliced

1 teaspoon dried basil

1 cup chopped fresh parsley

2 1/2 tablespoons miso

3/4 cup water

1 cup frozen peas

2 cups hot cooked pasta

8 teaspoons flaxseed oil (optional)

 

In a small dry pan, toast the sesame seeds, stirring constantly until they begin

to brown. Set aside.

 

Heat olive oil in a large pan. Add onion, garlic, tofu, and mushrooms and saute

over medium-low heat until onion is translucent.

 

Add basil, parsley, miso, and water and cook, stirring, for an additional 5

minutes.

 

Add frozen peas and cook until heated through.

 

Divide the cooked pasta into serving bowls and top with vegetables.

 

Drizzle 2 teaspoons of flaxseed oil onto each serving, if desired. Sprinkle each

serving with toasted sesame seeds.
