This recipe -- Similar to alfredo -- comes from " What to Eat If You Have Cancer Cookbook " Caution: This is not " lowfat " in the " under 30% of the calories from fat " meaning of the word. Salt is high, too. Per Serving (excluding unknown items): 304 Calories; 13g Fat (39.6% calories from fat); 16g Protein; 30g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 896mg Sodium. Exchanges: 1 1/2 Grain(Starch); 1 1/2 Lean Meat; 1/2 Vegetable; 1 1/2 Fat; 1/2 Other Carbohydrates. * Exported from MasterCook * Creamy Tofu Pasta Recipe By :Maureen Keane and Daniella Chace 1997 Serving Size : 4 Preparation Time :0:00 Categories : 2Try Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons extra-virgin olive oil 4 large cloves garlic -- chopped fine 1/4 cup finely chopped red onion 1 32-ounce package soft tofu 1/2 cup water 3 1/2 tablespoons tamari or light soy sauce 1 1/2 teaspoons dried sweet basil 2 cups hot cooked pasta 1/4 cup chopped fresh parsley Heat the olive oil in a small pan. Add garlic and onion and saute over medium-low heat until the onion is translucent. In food processor, blend the tofu until it reaches a uniform consistency. Pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat. Add water, tamari, and basil to the pan and cook for 5 minutes more. Pour the tofu sauce over cooked pasta. Toss well and sprinkle with parsley. Serve immediately.
