Guest guest Posted February 2, 2001 Report Share Posted February 2, 2001 * Exported from MasterCook * One-Bean Salad With Lime-Mustard Dressing Recipe By :Don Mauer Serving Size : 6 Preparation Time :0:20 Categories : Beans & Legumes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh green beans -- trimmed 2 tablespoons coarse-grained Dijon mustard 2 tablespoons rice vinegar or white wine vinegar 1/2 teaspoon grated lime rind 2 tablespoons fresh lime juice -- up to 3T 1/2 tablespoon olive oil 1/2 teaspoon honey 1 garlic clove -- minced 1 large shallot -- minced 1/4 teaspoon salt 1/2 teaspoon freshly ground pepper Cook green beans in boiling water to cover 3 to 4 minutes or until crisp-tender. Drain. Plunge beans into ice water to stop the cooking process; drain. Whisk together Dijon mustard and next 9 ingredients; pour over green beans, tossing to coat. Let stand 30 minutes.
