Main Dishes, Vegetarian Pasta East To West Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces soba or udon or spaghetti or linguine 1 tablespoon canola or peanut oil 3 cloves garlic -- minced, up to 4 1/2 cup vegetable stock or water 1/4 cup natural-style or reduced-fat peanut butter 1/4 cup fresh cilantro leaves 1 teaspoon grated fresh ginger -- to taste, up to 2 1 tablespoon honey or brown rice syrup 1 teaspoon Asian or Thai hot sauce -- plus more to taste 1 teaspoon salt -- plus more to taste 2 teaspoons minced lemon grass -- optional 1 large carrot -- peeled and grated 2 scallions -- sliced, up to 3 1/4 cup coarsely chopped peanuts 4 servings Luscious and nutty, this easy dish incorporates favorite Asian flavors. Cook the noodles in plenty of rapidly simmering water until al dente, then drain. Meanwhile, heat the oil in a small skillet. Add the garlic and sauté over low heat until golden, about 2 to 3 minutes. Transfer the oil and garlic to a food processor, and combine with the stock, peanut butter, cilantro, ginger, honey, hot sauce, salt, and optional lemon grass. Process until completely smooth. Combine the noodles with the sauce in a large serving bowl. Serve at once, topping each serving with a small amount each of the carrot, scallions, and peanuts.
