A tiny china doll is often baked into the dough: the person receiving the piece of bread with the doll must give a party on February 2 to celebrate the Feast of the Candles! 1 loaf (12 servings) 1. Mix yeast, warm milk and 1/2 cup flour in small bowl; beat well. Let stand, covered, in a warm place for 30 minutes. Beat margarine and 1/4 cup sugar in medium bowl until fluffy. Beat in egg, egg whites, and salt. Add yeast mixture, mixing well. Mix in raisins, 1/4 cup candied fruit, walnuts (optional), and 1 3/4 cups flour; mix in remaining 1/2 cup flour, if necessary, to make soft dough. 2. Knead on floured surface until smooth and elastic, about 5 minutes. Place dough in greased bowl; let stand, covered, in a warm place until dough is double in size, about 1 hour. Punch dough down. 3. Form dough into a round on greased cookie sheet. Make a hole in center of dough, then stretch with fingers into a ring 8 inches in diameter. Let rise, covered, in a warm place until double in size about 30 minutes. Decorate with remaining 1/4 cup of candied fruit. 4. Bake at 375 degrees until bread is golden, 25 to 30 minutes. Brush bread with 1 to 2 tablespoons of milk and sprinkle with remaining 2 tablespoons of sugar. Bake until glazed, 3 to 5 minutes longer. Remove from oven and cool on wire rack.
