Coconut Rice

3/4 cup lite coconut milk -- divided

1 1/2 cups water

1 garlic clove -- minced

1/2 teaspoon salt

1 cup uncooked basmati rice

2 tablespoons chopped fresh basil

 

Place coconut milk in a medium saucepan, reserving 2 tablespoons. Add 1 1/2

cups water, garlic, and salt. Bring to a boil over

medium-high heat; stir in rice. Cover, reduce heat, and simmer 20 minutes or

until liquid is absorbed. Stir in reserved coconut

milk and sprinkle with basil.

 

Per 1/2-cup serving: Calories 131 (12% from fat); Fat 1.7g (sat 1g; mono 0.1g,

poly 0.1g); Protein 2.7g; Carb 26g; Fiber 0.4g; Chol
