Guest guest Posted February 1, 2001 Report Share Posted February 1, 2001 * Exported from MasterCook * Tofu Chocolate Almond Mousse Recipe By :Soy Desserts - Patricia Greenberg Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds regular tofu 1/2 cup sugar or light granulated cane juice 1/2 cup unsweetened cocoa powder 1 teaspoon almond extract 1/4 cup almond slivers, for garnish In a food processor, puree the tofu until smooth. Add the sugar, cocoa, and almond extract and continue to process until thoroughly combined. Pour the mixture into an airtight container and chill for 2 hours. Serve in individual dessert dishes and garnish with almonnd slivers. This will keep, wrapped, in the refrigerator for 1 week. VARIATION: TOASTING ALMONDS Preheat the oven to 400F. Place the almond slivers on a cookie sheet and bake for 5 to 7 minutes. Toasting brings out a strong almond flavor in the nuts. Description: " Hands down, this chocolate tofu mousse can pass for the real thing. Serve it in a well-designed glass bowl as an elegant dessert, or pour it into plastic cups and give it to the kids as pudding.
