Tofu Chocolate Almond Mousse

1 1/2 pounds regular tofu

1/2 cup sugar or light granulated cane juice

1/2 cup unsweetened cocoa powder

1 teaspoon almond extract

1/4 cup almond slivers, for garnish

 

In a food processor, puree the tofu until smooth. Add the sugar, cocoa, and

almond extract and continue to process until thoroughly combined.

 

Pour the mixture into an airtight container and chill for 2 hours. Serve in

individual dessert dishes and garnish with almonnd slivers.

 

This will keep, wrapped, in the refrigerator for 1 week.

 

VARIATION: TOASTING ALMONDS Preheat the oven to 400F. Place the almond

slivers on a cookie sheet and bake for 5 to 7 minutes. Toasting brings out a

strong almond flavor in the nuts.
