Many-Cloves Garlic Sauce

25 cloves garlic -- peeled

2 teaspoons olive oil

1 3/4 cups Basic Vegetable Stock -- divided

1/4 cup dry white wine, or Basic Vegetable Stock

2 tablespoons flour

2 tablespoons finely chopped fresh parsley

1/8 teaspoon salt

2 dashes white pepper

 

Cook garlic in oil in medium skillet, covered, over medium to medium-low heat

until tender, about 10 minutes. Cook, uncovered, over medium-low to low heat

until garlic cloves are golden brown, about 10 minutes. Mash cloves slightly

with a fork.

 

Add 1 1/2 cups stock and wine to skillet and heat to boiling. Mix flour and

remaining 1/4 cup stock and stir into boiling mixture. Boil, stirring

constantly, until thickened, about 1 minute. Stir in parsley, salt, and pepper.

 

Description:
