Guest guest Posted February 1, 2001 Report Share Posted February 1, 2001 * Exported from MasterCook * Snow Pea Soup Recipe By : 1,001 Low-Fat Vegetarian Recipes by Sue Spitler, page 76 Serving Size : 6 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup sliced green onions and tops 1/2 cup chopped onion 1 tablespoon margarine 1 pound snow peas -- trimmed 4 cups coarsely chopped romaine lettuce 4 cups Basic Vegetable Stock -- (see p. 58) 1/2 teaspoon dried tarragon leaves 1/2 teaspoon dried mint leaves Salt and white pepper -- to taste 6 tablespoons plain fat-free yogurt Fresh mint or tarragon sprigs 6 side-dish servings (about 1 1/4 cups each) Make this soup a day in advance so that flavors can blend. 1. Sauté onions in margarine in large saucepan until tender, about 5 minutes. Add snow peas and lettuce; sauté 3 to 4 minutes longer. Add stock, tarragon, and mint; heat to boiling. Reduce heat and simmer covered, 15 minutes or until snow peas are very tender. 2. Process soup in food processor or blender until smooth; strain. Season to taste with salt and white pepper. Serve warm, or refrigerate and serve cold. 3. Pour soup into bowls; garnish each with a tablespoon of yogurt and fresh herb sprigs.
