Lentil, Olive and Orange Salad

1 tablespoon fresh lemon juice

1 tablespoon extra virgin olive oil

2 cloves garlic -- minced

1/2 teaspoon ground cumin

1/4 teaspoon salt

pinch ground cloves

2 cups cooked lentils

2 navel oranges -- peeled and sectioned

1 small red onion -- chopped

1/4 cup sliced pimiento stuff green olives

2 tablespoons chopped fresh parsley

lettuce or spinach leaves (optional) -- for serving

 

Mix the lemon juice, oil, garlic, cumin, salt and cloves in a bowl. Gently stir

in the lentils, orange sections, onion, olives and parsley. Serve the lentils

salad over greens (if using).
